Description

We can thank the Italians for the now popular appetizer, bruschetta. And we can thank the ingenuity of many chefs for the myriad of variations that can now be found on this theme. The basic bruschetta is sliced, toasted Italian bread that has had good quality olive oil drizzled over it, followed by a clove of raw garlic rubbed on it. This recipe is for the basic but tasty topping.

Ingredients

  • 1 c dried tomatoes in oil, drained and chopped
  • 1⁄2 c toasted pine nuts, coarsley chopped
  • 1⁄2 c scallions, minced
  • 3 oz asiago, grated
  • 8 oz provolone, shredded

Instructions

Mix tomatoes, nuts, scallions, Asiago and Provolone. Sprinkle 1/2 T. to 2 T.
topping over each slice of bread.
