Description

Granola is so easy to make at home, it doesn't even fall into the category of cooking. Since a little effort goes a long way, solo cooks with limited time and experience might want give it a go. Granola keeps for a long time stored in a jar with a screw-top lid and even longer.

Ingredients

  • 2 ripe bananas
  • 1 1⁄2 t salt
  • 1 c soft pitted dates
  • 1⁄2 c water
  • 4 c old fashioned oatmeal
  • 4 c quick oats
  • 1 c unsweetened shredded coconut
  • 1⁄2 c sunflower seeds
  • 1 c chopped walnuts or almonds

Instructions

Mix oatmeal, oats, coconut, sunflower seeds, and nuts together in large bowl. Blend bananas, salt, dates and water smooth in blender. Mix all together and spread on 2 large cookie sheets. Bake at 200 degrees for 90 minutes, stirring and switching top and bottom shelves in the oven every 30 minutes. I turn off the oven and leave it in the oven until the next day to make sure it is cool and dry. Store in jar or plastic bag.
